Cowboy Chicken is refreshing its menu for summer with the debut of two limited-time salads and the return of a fan-favorite seasonal dessert.

The wood-fired rotisserie chicken chain, known for its rustic flavors and fast-casual format, is rolling out the new offerings beginning May 26, and they will be available through Aug. 31. The new items offer lighter, protein-packed options perfect for the warmer months. Each salad features crisp greens paired with seasonal ingredients and Cowboy Chickens signature rotisserie meats.

The Buffalo Chicken Salad is a new, limited-time dish featuring Buffalo-tossed chicken tenders served over chopped greens with Monterey Jack cheese, grape tomatoes, avocado, smoky bacon bits, and a ranch drizzle. It offers 51 grams of protein and is priced at $13 ($13.50 in Georgia and Florida).

The new Sonoran Salad includes wood-fired cilantro lime chicken over greens with Monterey Jack cheese, pico de gallo, avocado, tortilla strips, and Cowboy Dust, served with chipotle ranch dressing. The salad contains 36 grams of protein and is also priced at $13 ($13.50 in Georgia and Florida).

Returning to the menu is the much-loved Monterey Salad, which includes wood-fired chicken with avocado, cilantro, tomatoes, Monterey Jack cheese, cheese crisps, and chicken cracklins on a bed of greens, paired with chili lime dressing. It has 48 grams of protein and follows the same pricing.

For dessert, Cowboy Chicken is bringing back its Strawberry Shortcake, a golden shortcake topped with fresh strawberries and whipped cream, available for $5.50.

Customers can order the summer offerings in store, online, or through the Cowboy Chicken app. Loyalty program members using the Wild West Rewards system can earn points toward free menu items and exclusive coupons.
